Consomm\u00e9 crue, l\u2019arbouse n\u2019a pas de grand int\u00e9r\u00eat gustatif et culinaire.<\/p>\n<h3><strong> Pour 4 pots de 375g :<\/strong><\/h3>\n<p>Cr\u00e9ation de la gel\u00e9e d&rsquo;arbouses<\/p>\n<p>\u20221,5 kg d\u2019arbouses<br \/>\n\u2022Sucre cristallis\u00e9<br \/>\n\u20221 citron non trait\u00e9<\/p>\n<p><a href=\"http:\/\/www.locationencorse.eu\/blog\/wp-content\/uploads\/2017\/03\/20170305_112617.jpg\" target=\"_blank\" rel=\"noopener\" data-rel=\"lightbox-image-0\" data-rl_title=\"\" data-rl_caption=\"\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-7144 size-full\" title=\"'arbouses\" src=\"https:\/\/www.locationencorse.eu\/blog\/wp-content\/uploads\/2017\/03\/20170305_112617.jpg\" alt=\"Gel\u00e9e d' arbouses petit d\u00e9jeuner id\u00e9al\" width=\"800\" height=\"927\" srcset=\"https:\/\/www.locationencorse.eu\/blog\/wp-content\/uploads\/2017\/03\/20170305_112617.jpg 800w, https:\/\/www.locationencorse.eu\/blog\/wp-content\/uploads\/2017\/03\/20170305_112617-345x400.jpg 345w, https:\/\/www.locationencorse.eu\/blog\/wp-content\/uploads\/2017\/03\/20170305_112617-768x890.jpg 768w, https:\/\/www.locationencorse.eu\/blog\/wp-content\/uploads\/2017\/03\/20170305_112617-690x800.jpg 690w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>Essuyer d\u00e9licatement les baies d\u2019arbouses dans un linge humide.<br \/>\nVerser les baies dans une casserole et les recouvrir d\u2019eau.<br \/>\nPorter \u00e0 \u00e9bullition \u00e0 feu vif et faire cuire jusqu\u2019\u00e0 ce que toutes les baies \u00e9clatent et lib\u00e8rent leur jus.<br \/>\nRetirer du feu et verser dans un chinois dispos\u00e9 au dessus d\u2019un grand r\u00e9cipient.<br \/>\nR\u00e9cup\u00e9rer le jus en pressant bien sur les fruits pour en extraire tout le jus.<br \/>\nLaisser d\u2019\u00e9couler doucement.<br \/>\nPeser le poids de jus r\u00e9colt\u00e9 et pr\u00e9parer la m\u00eame quantit\u00e9 de sucre cristallis\u00e9.<br \/>\nExtraire le jus du citron au moyen d\u2019un presse agrume.<br \/>\nVerser le sucre, le jus d\u2019arbouse et le jus de citron dans une bassine \u00e0 confiture.<br \/>\nChauffer \u00e0 feu moyen jusqu\u2019\u00e0 ce que le sucre soit bien dissous dans le liquide.<br \/>\nPorter \u00e0 \u00e9bullition \u00e0 feu vif et laisser cuire pendant 10 minutes jusqu\u2019\u00e0 ce que le sirop s\u2019\u00e9paississe.<br \/>\nLa gel\u00e9e est cuite quand la temp\u00e9rature atteint 105\u00b0C au thermom\u00e8tre \u00e0 sucre.<br \/>\nRetirer du feu et verser dans les pots \u00e0 confiture, refermer de couvercles \u00e0 vis puis&nbsp;les retourner et les laisser refroidir. Les ranger \u00e0 l&rsquo;endroit dans un placard \u00e0 l&rsquo;abri de la lumi\u00e8re.<\/p>\n<h3><strong>L&rsquo;arbousier<\/strong><\/h3>\n<p>L&rsquo;arbousier, aussi appel\u00e9 arbre \u00e0 fraises est un petit arbre assez r\u00e9pandu en corse.<br \/>\nIl produit de petits fruits ronds, d&rsquo;abord jaune, puis orange et enfin rouge \u00e0 maturit\u00e9, \u00e0 la peau rugueuse.<br \/>\nLa chair est molle, acidul\u00e9e et sucr\u00e9e \u00e0 la fois, mais contient de nombreux et minuscules p\u00e9pins, ce qui rend le fruit granuleux.<\/p>\n<p>Tr\u00e8s facile d\u2019entretien, l\u2019arbousier pousse vite lorsqu\u2019il est bien install\u00e9 et ne n\u00e9cessite pratiquement aucun soin.
