Le fromage Brocciu est au lait de brebis Corse. Le fromage Brocciu se pr\u00e9sente sous la forme d\u2019une boule aplatie moul\u00e9e en \u00ab canestre \u00bb , dans une petite corbeille. Il est fabriqu\u00e9 en hiver et jusqu\u2019\u00e0 la fin du printemps. <strong>Impossible donc d\u2019en servir en \u00e9t\u00e9.<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: rgb(255, 102, 0);\"><strong>Beignets au Brocciu<a href=\"http:\/\/www.locationencorse.eu\/blog\/brocciu-desserts\/beignet\/\" rel=\"attachment wp-att-373\"><img decoding=\"async\" loading=\"lazy\" width=\"225\" height=\"168\" class=\"alignright wp-image-373 size-full\" alt=\"beignet\" src=\"http:\/\/www.locationencorse.eu\/blog\/wp-content\/uploads\/2014\/01\/beignet.jpg\"><\/a><\/strong><\/span><\/p>\n<ul>\n<li>250g de brocciu<\/li>\n<li>3 \u0153ufs<\/li>\n<li>75g de sucre<\/li>\n<li>75g de farine<\/li>\n<li>1 citron<\/li>\n<li>20g de beurre<\/li>\n<li>20g de sucre roux<\/li>\n<\/ul>\n<p>M\u00e9langez la farine, le sel, les \u0153ufs et le petit lait du fromage de fa\u00e7on \u00e0 obtenir une p\u00e2te sans grumeaux, ajoutez le sucre en poudre, la vanille et le broccio battu \u00e0 la fourchette, le rhum (facultatif), laissez reposer pendant 15 mn.<\/p>\n<p>Chauffez votre po\u00eale pleine d&rsquo;huile et avec une petite louche ou 2 cuill\u00e8res, formez des boules plus ou moins grandes suivant votre go\u00fbt, et laisser dorer pendant 4 mn, dans le bain de friture.<\/p>\n<p>\u00c9gouttez-les dans une passoire au fur et \u00e0 mesure de vos cuissons. Puis saupoudrez-les, de sucre glace.<\/p>\n<p><span style=\"color: rgb(255, 102, 0);\"><strong>Le Fiadone<\/strong><a href=\"http:\/\/www.locationencorse.eu\/blog\/brocciu-desserts\/fiadone\/\" rel=\"attachment wp-att-381\"><img decoding=\"async\" loading=\"lazy\" width=\"150\" height=\"150\" class=\"alignright size-thumbnail wp-image-381\" alt=\"fiadone\" src=\"http:\/\/www.locationencorse.eu\/blog\/wp-content\/uploads\/2014\/01\/fiadone-150x150.jpg\"><\/a><\/span><br \/>\n1 brocciu<br \/>\n150g de sucre<br \/>\n4 \u0153ufs &#8211; 1 citron r\u00e2p\u00e9<br \/>\nQuelques grammes de beurre<\/p>\n<p>Ecraser le brocciu \u00e0 la fourchette dans un saladier. Ajouter le sucre, puis le zeste d&rsquo;1\/2 citron. M\u00e9langer le tout dans un autre saladier, battre les \u0153ufs. Battre la pr\u00e9paration de brocciu avec un fouet \u00e9lectrique \u00e0 vitesse lente, puis plus rapide, et enfin plus lente pour lisser le tout. Incorporer doucement les \u0153ufs, bien m\u00e9langer.<\/p>\n<p>Beurrer g\u00e9n\u00e9reusement un moule rectangulaire et versez-y la pr\u00e9paration.<\/p>\n<p>Mettre \u00e0 four chaud pendant 15 minutes \u00e0 200\u00b0.D\u00e9s qu&rsquo;il commence \u00e0 gonfler, baisser la temp\u00e9rature \u00e0 175\u00b0durant 15 minutes. V\u00e9rifier la cuisson. Il faut que le fiadone soit bien dor\u00e9. Piquez-le avec la lame d&rsquo;un couteau.
