Au d\u00e9but de l&rsquo;\u00e9bullition, verser, par petites quantit\u00e9s, la farine de ch\u00e2taigne, en battant \u00e9nergiquement pour \u00e9viter la formation de grumeaux, jusqu&rsquo;\u00e0 consistance d&rsquo;une p\u00e2te cr\u00e9meuse. Laisser cuire 10 mn environ, en remuant fr\u00e9quemment.&nbsp; Le meilleur moment pour d\u00e9guster : le matin en remplacement des corns flakes puisque cela se d\u00e9guste chaud dans des assiettes \u00e0 soupe en y ajoutant du lait froid ou chaud. Cette recette, un peu oubli\u00e9e de nos jours, servait autrefois de nourriture quotidienne aux bergers corses. Variante : farinata. Ajouter quelques cuill\u00e9r\u00e9es d&rsquo;huile d&rsquo;olive. Sur la plaque ainsi garnie, appliquer le deuxi\u00e8me fer, lui-m\u00eame chauff\u00e9 et graiss\u00e9. Inverser les fers pour dorer chaque face du Nicci. La Pulenta se mange accompagn\u00e9e de <a href=\"https:\/\/www.corsica-colis.com\/100-figatellu\">Figatellu<\/a> (saucisson de foie), de fromage frais, d&rsquo;\u0153ufs, de viande de porc etc&#8230;.Il est possible de la d\u00e9guster de plusieurs fa\u00e7ons :<\/p>\n<p>D\u00e9coupez la polenta \u00e0 l\u2019aide d\u2019un fil \u00e0 couper le beurre ou d\u2019un couteau bien tranchant. Il est possible de la d\u00e9guster de plusieurs fa\u00e7ons :<\/p>\n<ul>\n<li>En frite : versez un peu d\u2019huile dans une po\u00eale pour y faire frire des tranches de Polenta.<\/li>\n<li>Grill\u00e9e : Faire griller des tranches de Polenta froides au four en mode grill ou au feu de bois sur une grille.<\/li>\n<\/ul>\n<p><span style=\"color: #ff6600;\"><strong>A Torta&nbsp;:<\/strong><\/span> Pr\u00e9parez une p\u00e2te l\u00e9g\u00e8re avec de la farine de ch\u00e2taigne, de l&rsquo;eau l\u00e9g\u00e8rement sal\u00e9e et une cuiller\u00e9e \u00e0 soupe de lait. Huilez un moule \u00e0 tarte. Y verser cette p\u00e2te en l&rsquo;arrosant de quelques gouttes d&rsquo;huile d&rsquo;olive. Pour bien les r\u00e9ussir, il faut un beau feu de bois et un bon \u00ab\u00a0caldarustu\u00a0\u00bb (r\u00e9cipient en terre cuite ou en t\u00f4le perc\u00e9e de gros trous et muni d&rsquo;une anse). A l&rsquo;aide d&rsquo;un couteau, entailler toutes les ch\u00e2taignes. Les faire sauter 5 mn dans le caldarustu, \u00e0 grande flamme, puis les laisser dorer en secouant le r\u00e9cipient de temps \u00e0 autre.
